Vegan Thanksgiving Stuffing

This tastes just like regular stuffing but better! It is pretty easy and defiantly and crowd pleaser. ring this to your Thanksgiving dinner and it will be a hit. Guaranteed.

Ingredients:

  • 3 cups of dried crusty bread, cubed
  • 1 medium onion
  • 2 cloves of garlic
  • 2 tbs flax meal
  • 5 tbs water
  • 1 tsp poultry seasoning (its vegan) 
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sage
  • 1 tsp parsley
  • 1 tsp thyme
  • 4 carrots
  • 3 stalks of celery
  • 3 cups of vegetable stock

Directions:

  1. Cut bread into 1 inch cubes and bake for 7 minutes at 375
  2. Finely chop onions and sweat them down in a pan with (water or oil) for 5-10 minutes
  3. Add in garlic and spices, cook for another 2 minutes
  4. Chop carrots and celery fairly small
  5. Add those to the onions and cook for 5 minutes covered
  6. Combine flax with water and let sit for 5 minutes 
  7. Add the toasted bread cubes to a large bowl
  8. Combine the carrot and onion mixture with the bread cubes
  9. Mix until everything is coated
  10. Add in veggie stock and flax eggs and mix well
  11. Lightly grease baking dish and add in mixture
  12. Bake for 20-30 minutes at 350
  13. Enjoy!
