Apple Pie Pancakes

Apple Pie Pancakes

Nothing is better than a tall, fresh stack of pancakes on a chilly weekend morning. These pancakes are perfect! Gluten-free, oil-free, & refined sugar-free pancakes, filled with sweet cinnamon apples in the center. Made with wholesome ingredients like oats to keep you fueled throughout the day! I love topping mine with fresh Vegan Caramel! Recipe video below!

Ingredients:

  • 1 large apple of choice (I like granny smith)
  • 1 tsp cinnamon
  • 1/4 tsp clove
  • 2.5 cups oat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup unsweetened nondairy milk
  • 1 tsp apple cider vinegar
  • 2-3 tbsp maple syrup (or other liquid sweetener)
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla

Directions:

  1. Peel and chop your apple into bite sized cubes
  2. Add the apple cubes into a large pan and add the cinnamon & clove
  3. Cook down for 10 minutes stirring every 3 or so minutes on medium-high heat. They should be very soft but still have a defined shape when they are done
  4. In a large bowl, mix your oat flour, baking soda, & baking powder
  5. In a small bowl add your nondairy milk and vinegar. Let that sit for 5 or so minutes
  6. Add the remaining ingredients to the milk mixture
  7. Add the wet ingredients to the dry & fold together
  8. Preheat a nonstick pan or medium low
  9. Add about 1/4 cup of batter to the pan per pancake, then add about 1 teaspoon of the apple mixture to the center. Cover the apples up with a tablespoon of batter
  10. Flip the pancakes once the edges have dried out slightly and the underside is golden brown
  11. Serve right away with some extra apples on top and a drizzle of Vegan Caramel
  12. Enjoy!
