Baked Chocolate Chip Oatmeal

Okay okay. You guys know I have a lot of breakfast recipes on here and I love all of them deeply, I really do. But NONE of them compare to this one. This recipe is next level amazing. The ingredients are solid, the method is simple, and the result…INCREDIBLE. If you make any recipe from this blog, make this one. I promise it will not disappoint. I like this chocolate chip peanut butter version but I have also listed a few other flavor combos at the end of this post!

Ingredients:

  • 2 heaping cups oats (both quick and whole oats work great)

  • 2 tbsp ground flax

  • 1 tsp baking powder

  • pinch of salt

  • 1.5 cups non-dairy milk

  • 1/2 cup maple syrup

  • 1/4 cup nut butter (I like peanut butter the best)

  • 1/3 cup+ chocolate chips

Directions:

  1. Preheat the oven to 350 and prep a 9x9 baking dish with either nonstick spray or parchment

  2. Combine all the ingredients in a large bowl making sure everything is distributed properly

  3. Transfer oatmeal to the baking dish and flatten the top

  4. Bake for 40-50 minutes, or until the top is slightly cracked and the edges are golden brown!

  5. Enjoy right away or keep in an airtight container for up to a week!

Other mix-in ideas:

  • mashed banana

  • blueberries

  • cinnamon

  • pumpkin puree

  • protein powder

  • carrot cake (shredded carrot, cinnamon, and raisins!)
