BBQ Jackfruit Tacos

BBQ Jackfruit Tacos

Who doesn't love a good barbeque taco every once in awhile? I sure do! And as a vegan it can be hard to get an authentic tasting bbq taco. But fear not, for here is a recipe that will blow your mind! It is so easy & simple to make, and it is so easy you'll be making it every week! These tacos are made with a magical fruit called jackfruit! It grows in tropical climates and is full of little pockets with seeds inside. You can eat the little pockets fresh or buy them canned to use in dishes like this! When pulled apart, it resembles a pulled meat texture. There isn't much flavor on its own so adding something like barbeque sauce is a great way to add tons of flavor. These tacos are great for packing in lunches, meal prepping, enjoying at parties, and giving to your non-vegan friends to try!

  • 2 20 oz cans jackfruit in brine
  • 1/2-1/3 cup barbeque sauce (you can use homemade or store bought)
  • Juice from 1 lime
  • 5-6 tortillas (i prefer corn tortillas but any kind work)
  • 1 large carrot (thinly sliced)
  • 1 cup greens (i love sprouts or microgreens on these)
  • Fresh cilantro

  1. Drain and rinse jackfruit under cold water
  2. Place in a large bowl and pull apart gently with your hands. Should start to resemble pulled meat
  3. Place the jackfruit into a nut milk bag or squeeze with your hands until most of the liquid comes out
  4. Place fruit back in the bowl and add the BBQ sauce. Fold it together so every piece of jackfruit is coated evenly
  5. Cover and let sit in the fridge for at least 20 minutes
  6. Heat up a nonstick pan or cast iron skillet to medium high heat
  7. Cook the jackfruit for 10-15 minutes. Should be heated through and start to get slightly crispy
  8. Remove from heat and heat up your tortillas
  9. I like to char mine by flipping in constantly over my gas stove. You can also just steam them or warm them in the microwave
  10. Place some jackfruit inside the tortilla. Top with the carrots, greens, and cilantro for a fresh crunch
  11. Serve with extra BBQ sauce or salsa. Pack in lunches, serve at parties, or meal prep!
