Chocolate Oat Pancakes

Chocolate Oat Pancakes

If you know me at all, pancakes are life's work. I am always trying to come up with new ways to enjoy a god flapjack. I already have countless recipes on here but here is another one to add to your Sunday brunch bucket list. These pancakes have it all: chocolatey, oil-free, gluten-free, no refined sugars, AND easy! Recipe video at the bottom of this post

Ingredients:

  • 1 cup oat flour
  • 1/4 cup whole oats
  • 2 tbs cacao powder
  • 1 tsp baking powder
  • 1/4 cup coconut sugar
  • 1 flax egg (1 tbs ground flax, 3 tbs water)
  • 3/4 cup almond milk (or other plant milk)
  • 1 tbs unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (optional, but duh)

Directions:

  1. In a large bowl combine flour, oats, cacao, baking powder, and coconut sugar
  2. Then in a measuring cup whisk together the remaining wet ingredients
  3. Add the we mixture into the dry and gently mix
  4. Fold in the chocolate chips
  5. Heat a pan on medium-low heat
  6. Scoop your pancakes onto the pan and let cook unit bubbles begin to form and the surface looks drier, about 6-7 minutes
  7. Flip your pancakes for an additional 5 minutes 
  8. Serve with maple syrup, almond butter, coconut chips, banana, etc!
