Fruit, Nut, & Seed Energy Chunks

Bliss balls, granola bars, and date chunks are my favorite on the go snack. Super easy to whip together and satisfy all my cravings. Packed with fiber & protein to help fuel you through your day. These chunks can easily be made in big batches to eat through the week. Cut them into small bite sized chunks or bars! Add in all of your favorite super foods to pack in the nutrients! Try out carob powder, green powder,  or goji berries!



  • 20 pitted dates
  • 1/2 cup raisins
  • 1/2 cup almonds
  • 1/2 cup cacao powder
  • 1/4 cup almond butter
  • 2 tbs chia seeds
  • 1 tbs hemp seeds
  • 1/2 cup shredded coconut
  • 1 tsp vanilla extract
  • 1/4 cup cacao nibs
  • 1/2 + 2 tbs sunflower seeds


  1. Soak pitted dates in hot water for 10-15 minutes or until soft
  2. Drain the dates and place in a food processor or high speed blender
  3. Add in the raisins, raw almonds, cacao powder, almond butter, chia & hemp seeds, coconut, & cacao nibs
  4. Process until evenly blended and has formed a uniform dough. You may need to scrape down the sides
  5. Add in the 1/2 cup of sunflower seeds and pulse until evenly combined. I like to leave the texture of these. If the dough is not mixing well add 1-2 tbs of water
  6. Line an 8x8 pan with parchment paper and pour the dough into it
  7. Wet your hands slightly and press the dough evenly into all the corners and even out the top
  8. Sprinkle on the leftover sunflower seeds and gently press them into the dough
  9. Place in the fridge for 25-30 minutes to firm up or the freezer for 10-15 minutes
  10. Remove from the fridge and slice into evenly sized pieces
  11. Pack into a lunch or snack on the go!
