Freezer Fat Balls

Hello fuel! Now that I have switched to being high fat, I need snacks like this. They are so filling, I can honestly last hours without food after eating one of these bad boys. They are perfect for breakfasts on the go and packing in lunches. They not only are delicious, but also are completley customizable. I mean you can add whatever nuts and seeds you like and play around with the different textures they offer. They can last months in the freezer so I suggest making a GIANT batch and munching on them for a month of so, if you have the freezer space of course :)

Ingredients:

  • 1/2 cup almond butter
  • 1/4 cup melted coconut butter (or other nut butter)
  • 1 cup coconut (both chips and shredded work as long as they are unsweetened)
  • 3/4 cup raw cashews
  • 1/2 cup raw almonds
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw pumpkin seeds (pepitas)
  • 2 tbs other add ins (hemp seeds, cacao nibs, chia seeds, flax, etc)
  • 3 pitted dates
  • 1/3 cup almond milk

Directions:

  1. In a food processor or high speed blender, add all the ingredients
  2. Start by pulsing just to get everything roughly chopped then turn the machine on and slowly raise the speed
  3. My blender burned out the first time I made these so be sure to give it a break ;) Continuously stop it to scrape down the sides
  4. Stop blending when you have reached the desired consistency. I prefer a few chunks of nuts (about 4 mins of blending) but if you want a very smooth dough you will have to blend for longer
  5. Form balls in your hands. I like to use about 2-3 tbs of dough per ball but that is totally up to you
  6. Place in an airtight container and freeze
  7. Remove when you are ready to enjoy or pack!
