Grain-Free Almond Flour Chocolate Chip Cookies

Who doesn't like a warm chocolate chip cookies? Especially served with some fresh hot cacao! The problem is making a fresh batch of cookies, I tend to have a stomach ache because I ate some dough and a few warm cookies :) It's from all the refined flour, sugar, and vegan butter. But have fixed that! Now you can enjoy some perfectly satisfying cookies that won't cause any discomfort or guilt! Made with whole food ingredients that will actually fuel you. Grain-free, refined sugar-free, & oil-free! Super easy & quick to whip up for a party or just for an afternoon snack :)

Ingredients:

  • 1.5 cups almond flour
  • 2 tbs tapioca starch
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup brown rice syrup
  • 1/4 almond butter
  • 3-4 tbs non dairy milk
  • 1 tsp vanilla extract
  • 1/3 cup non dairy chocolate chips

Directions:

  1. Preheat oven to 350 degrees
  2. In a large bowl, combine all of the dry ingredients
  3. In a smaller bowl, mix the brown rice syrup, almond butter, milk, & vanilla until a smooth paste forms
  4. Add the wet ingredients to the dry & gently mix together
  5. Fold the chocolate chips into the batter
  6. Scoop about 1-2 tablespoons of batter per cookie onto a parchment lined baking tray
  7. Bake for 12 minutes or until they are slightly golden brown & have cracks on the top
  8. Let sit on the tray fro at least 10 minutes to set up
  9. Let cool completely before putting in an airtight container to store
