Lime + Cilantro Quinoa

Lime + Cilantro Quinoa

This is a perfect recipe to use in buddha bowls, packed lunches, or for meal prepping! I like to make it in my instant pot but you can of course make it on the stove top! It has so much flavor and it is super quick and easy to make! Feel free to double or even triple this recipe for lot of future meals!

Instant Pot Method:

Ingredients:

  • 1 cup quinoa (drained & rinsed)
  • 1.5 cups water
  • juice from 2 limes (about 1/4 cup)
  • 1-3 tbs lime zest
  • 1/4 cup finely chopped cilantro stems (stems have the same flavor as the leaves but they won't wilt)
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. In the pot of your pressure cooker, add the rinsed quinoa, water, lime juice, lime zest, cilantro stems, salt & pepper. Stir to combine
  2. Set the pressure cooker to manual high heat, and cook for 9 minutes
  3. Once the timer has gone off, let the pressure release naturally
  4. Serve right away with some extra lime & cilantro or pack it away for future meals!

Stove Top Method:

Ingredients:

  • 1 cup quinoa (drained & rinsed)
  • 1.5 cups water
  • juice from 2 limes (about 1/4 cup)
  • 1-3 tbs lime zest
  • 1/4 cup finely chopped cilantro stems (stems have the same flavor as the leaves but they won't wilt)
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. In a medium pot, bring the water to a boil
  2. Add in the quinoa, lime juice, zest, cilantro stems, salt & pepper
  3. Bring the heat down to a low and cover
  4. Let simmer for 15-20 minutes or until all the water has absorbed and the quinoa is nice and fluffy
  5. Once it has cooked, serve right away with some extra lime & cilantro or pack it up for another meal!
