Almond Butter Oatmeal Cookies

Oatmeal cookies are such a classic and everyone knows the cinnamon-y taste and chewiness. Well you know me, I gotta change it up somehow. So here is my recipe for AMAZING chewy oatmeal cookies that are oil-free, gluten-free, AND refined sugar-free. Can I get a hallelujah? You are defiantly going to want to make these for your next summer gathering, potluck, or cookout! And if you want to change up the flavors, add some nuts, chocolate, banana, blueberries, or whatever you fancy!

Ingredients:

  • 1/2 cup natural, unsalted nut butter (cashew, peanut, almond, etc)

  • 1/3 cup liquid sweetener (agave, coconut nectar, maple syrup, brown rice syrup, etc)

  • 1 tsp vanilla

  • 1/2 tsp baking soda

  • 3/4 cup oat flour (see notes for directions to make)

  • 1/2 cup whole oats

  • Optional toppings or fillings (see notes for my go-to choice)

Directions:

  1. Preheat oven to 350 degrees
  2. In a large bowl, combine the nut butter, sweetener, and vanilla until it becomes a smooth paste
  3. Add in the dry ingredients and combine until a slightly sticky dough forms
  4. Use a nonstick baking sheet or one lined with a silpat to bake on. These cookie will stick. I like to make smaller cookies by measuring out about one tablespoon of dough per cookie, but you can make them whatever size you wish
  5. Press them down slightly with your hands or the bottom of a glass
  6. Bake in the oven for 8-9 minutes or until golden brown
  7. Once they are dine baking, let cool for ten minutes before removing from the tray
  8. If you want to drizzle with chocolate or something now is the time to do so! 
  9. Eat right away or store in an airtight contianer
  10. Enjoy!
