Paleo + Vegan Chocolate Chip Cookies

Welp, being paleo and vegan at the same time has its challenges and finding a dessert is one of them. Especially one that satisfies that sweet craving. But I think I have done it ladies and gents. These cookies are unreal and even if you don't follow a specific diet, I recommend trying these. They are killer good and take little to no time to whip up. You can also keep them in the freezer and pop them out when you need a little pick me up. 


  • 2.5 cups almond flour

  • 1/2 cup tapioca starch

  • 1 tsp baking soda

  • 1/2 cup almond butter

  • 1/4 cup almond milk

  • 1 cup coconut sugar

  • 1 tsp vanilla extract

  • 1.5 cups dark chocolate



  1. Preheat oven to 350

  2. In a small bowl combine all the dry ingredients

  3. Then in a larger bowl, cream together the almond butter, almond milk, coconut sugar, and vanilla

  4. Add the dry ingredients into the wet ingredients and mix together to form a soft dough

  5. Fold in the chocolate until evenly dispersed throughout the dough

  6. Form dough balls with your hands and place them on a cookie sheet. I use about 2-4 tbs of dough per cookie

  7. Bake for 12 minutes or until they are golden brown and crispy on the edges

  8. Let cool and serve. Enjoy!
