Peanut Butter Protein Cookies

Nothing like a gooey peanut butter chocolate chip cookie…except now there is. These cookies have 5g of protein each, and let’s be real. We are having at least two :) These are great fresh out of the oven, refrigerated, or leave it as cookie dough for a decadent treat! They make great desserts or as a grab-and-go snack.

Ingredients:

  • 1/2 cup peanut butter

  • 1/4 cup coconut sugar

  • 2 flax eggs (2 tbsp ground flax, 6 tbsp water)

  • 3 tbsp almond milk

  • 1/2 tsp vanilla extract

  • 1/2 cup KOS chocolate peanut butter protein powder (or your favorite!)

  • 2 tbsp coconut flour

  • 1 tsp baking soda

  • 1/3 cup chocolate chips

  • optional flaky sea salt on top

Directions:

  1. Preheat your oven to 350

  2. Make your flax eggs and set them aside

  3. Combine your peanut butter, coconut sugar, flax eggs, milk, and vanilla in a large bowl until a paste forms

  4. Add in the protein powder, baking soda, and coconut flour. Mix until a dough forms. If it seems too dry, add a splash more milk

  5. Fold in your chocolate chips

  6. Line a baking sheet with a silpat or parchment paper and place slightly flattened balls of dough onto the sheet. I use about 1/4 cup of dough per cookie. The cookies do not spread that much so flatten as much as you like!

  7. Bake for 10 minutes or until slightly crispy on the outside and golden brown

  8. Let cool (if you can wait) and enjoy!
