Pina Colada Smoothie Bowl

Pina Colada flavors are a classic and one of my favorite combos of fruit. Obviously minus the alcohol, this bowl is the famous drink in a new form. And even better might I add. Think and creamy and perfectly paired with some textured toppings like granola or extra coconut. 

Ingredients: 

  • 1 frozen banana
  • 1/2 cup frozen pineapple
  • 1 tsb shredded coconut
  • 1/4 cup oats
  • 1 date
  • 1/4 cup soaked cashews, soaked for at least 4 hours (or other nut of choice)
  • 2-5 tbs of coconut water or nondairy milk to help it blend (optional)

Toppings:

  • Sliced banana
  • Shredded coconut
  • Hemp seeds
  • Goji berries

Directions:

  1. Place all of your ingredients into a high speed blender
  2. Start to blend on low and work your way up if your bender has different speed settings
  3. Once everything is well blended and you see no chunks, continue to blend for another 30 seconds or so. You will see the volume go up as it gets fluffier
  4. Place in a bowl (my favorite are the coconut bowls) and top with your favorite toppings. Mine are listed in the ingredients above!
