Favorite Ways To Make Potatoes

Potatoes are always a go to for meals anytime of the day and definitely a staple in my diet. Spuds can also seem kind of boring or bland but if you put the right spices on them they turn into something amazing! And by the way all of these methods work with all types of potatoes but the cooking times may change depending on the size or variety. So here are my favorite ways to make potatoes irresistible :) P.S. if you would like to watch me make all these variations of potatoes the video is at the bottom of the post!

1. Roasting

Roasting potatoes can seem intimidating sometimes especially when you want to make them oil-free. When using my method you get a perfectly fluffy interior and crunchy exterior. Here is my method...

Ingredients:

  • 1 lb of any type of potato (russet, red, sweet, gold, fingerling, etc)
  • 1 tsp black pepper
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Favorite condiments (ketchup, mustard, sriracha, etc)

Directions:

  1. Wash and scrub potatoes (peel skin if desired)
  2. Cut into wedges or disks
  3. In a large pot, boil potatoes for about 5 minutes (make sure water covers all the spuds)
  4. Preheat oven to 425 and line a baking sheet with parchment paper
  5.  Drain potatoes and place  on parchment 
  6. Add any seasonings you like, I typically use the ones above but you can change in up
  7. Bake for about 20 minutes
  8. Serve with your favorite condiments 
  9. Enjoy!

2. Instant Pot

Making potatoes in the instant pot is seriously the easiest way EVER! And they turn out more moist and flavorful. You can use any potato for this recipe and any pressure cooker.                 *Here is the instant pot I have*

Ingredients: 

  • 5-10 potatoes (depending on size of pressure cooker) 
  • 1 cup of water

Directions:

  1. Was and scrub potatoes but leave skin on
  2. Place wire rack in the base of instant pot
  3. Pour water into cooking pot
  4. Add potatoes onto the rack
  5. Close lid and sure vent to the "sealed" position
  6. Select the Manual button to set time to 10 minutes on high
  7. After timer goes off, let pressure release naturally (about 20 minutes) 
  8. Add your favorite toppings and seasonings
  9. Enjoy! 

3. Mashed

Who doesn't love mashed potatoes? They are surprisingly easy to make and totally customizable! No need to add any additional fat to them like vegan butter or other oils. They are perfect just the way they are! 

Ingredients: 

  • 4-5 potatoes (russet, red, gold all work well)
  • 1/2 cup non-dairy milk
  • 3 tbs vegan butter (completley optional, only if you want a richer mash)
  • seasonings and/or condiments

Directions: 

  1. Wash and scrub potatoes (remove skin if desired)
  2. Add to a large pot and cover with water
  3. Bring pot to a boil and cover 
  4. Boil potatoes until fork tender about 15-20 minutes
  5. Drain and return potatoes to pot or large bowl
  6. Smash potatoes until broken down (I use a potato maser but you can use a handful of different tools)
  7. Add milk and seasoning
  8. Mix until fluffy and smooth
  9. Serve on the side or as the main dish
  10. Enjoy!
