Protein Pancakes

After much hype on Instagram and perfecting this recipe, I am happy to say that these pancakes pack a PUNCH!! They are so filling and curb all my sweet cravings for the day. They are vegan (obvi) and gluten-free as well, of course, you can use regular all-purpose flour in the recipe too. I have my favorite protein powders listed below with a few discount codes for y’all!!

Ingredients:

  • 1 scoop plant protein powder

  • 1/2 cup almond flour

  • 1/2 cup flour of choice (i like oat flour)

  • 1 tsp baking powder

  • 1/4 cup maple syrup

  • 1-1.5 cups nondairy milk of choice

  • Optional add-ins: blueberries, chocolate chips

Directions:

  1. In a medium-sized bowl, combine all the dry ingredients and mix to combine. Make sure there are no lumps of protein powder

  2. Next pour in all the wet ingredients and mix

  3. Start with less milk and slowly add more to get the consistency you want. Some protein powders have different textures and absorbencies so the amount of milk you need will depend on the dry ingredients you choose.

  4. Heat a skillet on medium-low heat and scoop about 1/4 cup of batter for each pancake and cover.

  5. Cook for 5-7 minutes or until the bottom of the pancake can be easily lifted from the pan is golden brown! Cook on the other side until golden brown as well!

  6. Stack on a plate with any additional toppings you like and serve! I added peanut butter and extra maple syrup :)
