Spicy Ginger Broccoli + Chickpea Sheetpan

When it is time for me to meal prep, the least amount of dishes the better! This roast is make on one sheet pan and is so so simple! Also only takes 30 mins and is so delicious!!

Ingredients:

  • 3 cups broccoli florets

  • 1 can chickpeas, drained and rinsed

  • 1 cup edamame (optional)

  • 1/4 cup sliced pickled ginger (sushi ginger is the best!!)

  • 2 Tbsp sesame oil

  • 1-2 tbsp gochujang paste, adjust based on how spicy you like it!

  • 3 tbsp ginger juice from pickled ginger

  • 1/3 cup coconut aminos

  • 2 cloves garlic, minced

  • salt/pep to taste

  • green onion for garnish

Directions:

  1. Preheat oven to 450

  2. Add your broccoli, chickpeas, edamame, and sesame oil to a sheet pan and spread out evenly

  3. Roast in the preheated oven for 10-15 minutes or until broccoli is mostly cooked through and everything is getting slightly crispy

  4. While that is roasting, make your sauce by combining the remaining ingredients in a small bowl

  5. Remove the sheet pan from the oven and change the settings to broil

  6. Add your sauce to the broccoli-chickpea mixture and toss to combine

  7. Once the oven is broiling, add the sheet pan back in for 5-6 minutes. Keep an eye on it!!

  8. Once it is done, the veggies should be cooked through, the sauce should be thickened slightly, and everything should be a little crisp!

  9. Serve with some rice and/or some orange “chicken” tofu!! It is the best combo!!! Top with green onion!
