One Pot Tempeh Bolognese Linguine

One pot pastas should be a staple in everyone's meal planning, especially if you love easy, delicious, & healthy recipes like me! This one is packed with flavor & protein from the tempeh. Best party is it's oil-free, easily made gluten-free (with GF free pasta) & you probably have all of these in your pantry now! So put this recipe on your 'To-Make' list this week & get ready to be wowed by the payoff for so little effort!

Ingredients:

  • 1 lb linguine (you can also use spaghetti or angel hair)
  • 28 oz can diced tomatoes
  • 15 oz can tomato sauce
  •  3.5 cups veggie broth
  • 1/4 cup nutritional yeast
  • 2 blocks tempeh, crumbled
  • 1 medium onion, chopped
  • 2-3 cloves of garlic, minced
  • 1 tbs italian seasonings
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. In a large pot, add all of the ingredients & mix until the pasta is submerged
  2. Place on the stove & cover
  3. Bring to a boil
  4. Remove the lid & let simmer for 10-15 minutes, cook time will depend on the type of pasta you use
  5. Serve while it's warm or save for other meals to enjoy throughout the week
  6. I suggest serving with Vegan Parm and some fresh herbs
