Oil-Free White Bean Hummus

Oil-Free White Bean Hummus

Hummus has become one of my go to staples lately because of how convenient it is. Easy to pack in my lunch with veggies, on a sandwich and in wraps, or honestly by the spoonful :) Sadly so many store bought hummus brands add unnecessary oils and other preservatives. Luckily I'm here to help! This recipe can be made in advance and stored in an airtight container for up to a week! Perfect for meal prepping or a party. You can add any spices or herbs to your liking! Definitely a new staple in my fridge!  

Ingredients:

  • 2 cups white beans, soaked overnight and then cooked (or canned, drained and rinsed)
  • 1 1/2 cups garbanzo beans, soaked overnight and then cooked (or one can, drained and rinsed)
  • 1/3 cup lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dill 
  • 2 tbs nutritional yeast (optional for cheesy flavor) 

Directions:

  1. in a high speed blender or food processor, blend beans until a smooth paste forms, could take up to 5 minutes
  2. Add lemon and spices, blend until completley incorporated
  3. Pour into a bowl to serve with pita chips or veggie sticks, or seal in a container for a later time
  4. Enjoy!
