Vegan Apple Crisp

Apple crisp is a holiday classic that everyone should enjoy. This recipe is gluten-free, oil-free, & of course vegan. Not to mention there is no refined sugar! Full of fresh, seasonal apples & a sweet crumble to top it off! This a perfect recipe to make this holiday season. Make it for all of your friends & family! Trust me, they won't miss the cruelty. Apple Filling

Ingredients:

  • 8-10 medium-small apples (a combo of sweet and tart is good)

  • Juice from one lemon

  • 2/3 cup coconut sugar

  • 3 tbs tapioca starch

  • 1 tsp cinnamon

  • 1/4 tsp salt

Crumble

Ingredients:

  • 1/3 cup coconut sugar

  • 1/4 cup almond flour

  • 1/4 cup oat flour

  • 1/2 tsp cinnamon

  • 1/2 cup rolled oats

  • 1 tbsp maple syrup

  • 1/3 cup almond butter

Directions:

  1. Preheat oven to 425 degrees

  2. Start by peeling and slicing all of your apples. You can dice your apples into small cubes, or you can slice them very thinly (demonstration in video)

  3. Add all of your apples into a very large bowl and add your lemon juice. Mix the apples around until evenly coated. This will help keep them from turning brown

  4. Add the rest of the filling ingredients to the bowl and gently fold all together until evenly mixed

  5. Pour into a large baking pan. I used a 12 inch oval pyrex baking dish

  6. next make your crumble by combining all of your ingredients into a medium sized bowl. It may seem like it's too dry but keep mixing, and it will come together

  7. Sprinkle to crumble on top in an even layer

  8. Bake in the oven for 45-60 minutes. If th ecrumble starts to get too dark, cover with aluminum foil until finished baking

  9. When it's finished cooking, the apples should be very tender and bubbling

  10. Remove from the oven and let sit for at least 20 minutes at room temperature. Personally I like it best when it sits for at least 1 hour so the flavors can melt together

  11. Serve with some vegan vanilla ice cream or coconut whipped cream! Enjoy!
