Instant Pot Rice + Beans

It is that time of year again to bust out the Instant Pot! Starting this pressure cooker season off with a bang with this rIce and beans recipe!! It is super easy to make with very little prep time. It is great for meal prep and leftovers for many many days! This recipe makes a lot so adjust the recipe for your needs. You can cut it in half. Recipe can be made on the stove too! .

Ingredients:

  • 1 red onion, chopped

  • 1 cup cilantro, leaves and stems, chopped finely

  • 2 cans kidney beans (or beans of choice)

  • 16 oz can fire roasted diced tomatoes

  • 3 cups of rice

  • 6 cups veggie broth (or water)

  • 2 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tbs chili powder

  • 1 tsp crushed red pepper

Directions:

  1. Add all ingredients to your pressure cooker. You can also do this on the stove

  2. Stir all together and over with the lid

  3. Hit the rice button or manually set it to 10 minutes on high pressure

  4. Let that cook and then keep warm for 10 minutes

  5. Release the pressure and remove the lid

  6. Serve immediately or save for leftovers!
