Sweet Potato Flatbread

I love making this bread when I have soup or chili. It only takes a few minutes and it is perfect for dipping. There are multiple ways to make it, including gluten free options!

Ingredients:

  • 1 medium sweet potato

  • 1 cup flour of choice

Directions:

  1. Steam or bake your sweet potato. For this recipe, I like to make the potato in the microwave

  2. Remove the skin and mash slightly

  3. Add in your flour, start with little amounts and mix in

  4. Once the dough is starting to look dry knead for one minute on a floured surface

  5. Roll out until it is about a 1/4 inch thick

  6. Cut the dough into the size of bread you want

  7. Heat a pan on high heat

  8. Make sure the pan is very hot, then put the bread in the pan

  9. Cook for 5 minutes or so per side until bubbly and brown

  10. Serve warm with some soup or chili!

Suggestions:

If you want more of a tortilla, use corn meal/flour. If you want a fluffier bread, use white flour or whole wheat!
