Easy Mexican Beans

These beans make a perfect weeknight dinner because they cook so quickly! Just set it and forget it! I chose to make these in my Instant Pot to make this recipe even easier and faster! You can make these beans on the stove as well, but they will take a bit longer. See bottom for directions.

Ingredients:

  • 4-6 cups soaked beans (at least 6 hours)
  • 1 red onion
  • 2 bell peppers
  • 1/2 cup chopped sun dried tomatoes
  • 1 can tomato sauce
  • 1/2 cup of water
  • 1 tsp cumin
  • 3 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 cayenne pepper
  • 1 tsp ancho chili powder

Directions:

  1. In the pot of your pressure cooker place all of the ingredients and mix
  2. On the manual setting, set the instant pot for 20 minutes on high
  3. When the timer goes off, let the pressure release naturally
  4. After about 10-15 minutes open the lid, and serve

*directions for stovetop

  1. In a large pot, cook the peppers, onion, and dried spices until browned and fragrant

  2. Add in the tomato sauce and water, bring that to a boil

  3.  Add in the beans and lower heat to a simmer

  4. Cover and cook for 45-50 minutes or until the beans are tender and a thick sauce has formed

  5. Fold in fresh cilantro and serve
