Burrito Bowl

These burrito bowls have all the delicious components a big burrito has! Crispy tortilla, spicy tempeh, warm black beans, salsa, rice, peppers and greens! You can add whatever veggies you like to change up the textures and flavors! Great to have as leftovers or even meal prep for the rest of the week! 

Ingredients: 

  • 2-3 corn tortillas
  • 1 package of tempeh
  • 1 tbs chilli powder
  • 1 tsp garlic powder
  • 1 tsp cumin 
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1-2 tbs liquid of choice (liquid smoke, liquid aminos, soy sauce, or even water)
  • 1 bell pepper, chopped
  • 1/2 a head of romaine lettuce, chopped
  • 1 cup of spinach 
  • 1 cup of rice
  • 1/3 cup of black beans, rinsed and drained
  • 2-3 tbs of salsa
  • juice from one lime

Directions:

Oil-Free Tortilla Chips

  1. Cut tortillas into quarters and place on a baking sheet in one layer
  2. Broil for about 10 minutes, flipping half way(keep an eye on them, they burn quickly)

Tempeh

  1. Chop tempeh into strips and place in a bowl
  2. Add the spices and liquid and toss to coat
  3. Heat a pan on medium-high heat
  4. Cook tempeh on each side for about 5 minutes, should be darker in color and cripy

Assemble

  1. In a large bowl, add precooked rice 
  2. Add the chopped veggies and greens
  3. Layer in the tempeh, warmed black beans, and salsa
  4. Add the lime on top as the finishing touch
  5. You can crumble the chips on top for a crispy bite, or use them to dip into the yumminess :)
